Coconut Almond Meal Energy Bars
Ingredients:
- 1 cup almond meal (made with Ellie’s Best Sweet raw almonds)
- 4 tbsp coconut oil
- 3-4 tbsp shredded coconut
- 3 tbsp coconut oil
- Cinnamon
- Handful of raisins
- Dash of salt & cinnamon
- 3-4 heaping tbsp peanut butter
- 1 cup melted chocolate
Directions:
1.Mix the almond meal with the coconut oil, coconut, raisins and spice of choice (we love cinnamon) in a bowl. Set aside.
2.Pour 1/2 the chocolate into parchment paper lined tray - make sure to spread up the sides of the tray to hold contents in place
3.Spread over the almond meal coconut mixture
4.Spread peanut butter on top followed by rest of melted chocolate
5.Freeze for a couple hours or refrigerate a few hrs until hardened
6.Remove from tray and cut into desired shape. Keep refrigerated.
