Pink Pitaya Crepes

Ingredients:

  • 1 3/4 cup white flour
  • 2 cups nut milk
  • 3 eggs
  • 1 tbsp vanilla extract
  • 1 tbsp coconut sugar
  • 2 tbsp pink pitaya
  • 2 tbsp salted butter
  • 1 tsp strawberry jam (topping)
  • 1 tbsp maple syrup (topping)

Directions:

  1. Mix the flour, sugar and pink pitaya in a medium bowl
  2. Next whisk the nut milk, eggs, vanilla
  3. Combine ingredients and mix thoroughly
  4. Melt the butter either on stove with a double boiler or in microwave
  5. Whisk butter into the mixture
  6. Cook in a well-buttered pan at med/low heat, as you pour batter make sure to rotate the pan to spread mixture out into a thin and even layer the width of your pan
  7. Flip when the edges of your crepe begin to turn up and you can peek at the bottom of the crepe and see that it is cooked
  8. Top with maple syrup and a little strawberry jam if you like!
