Pink Pitaya Bowl

  • Ingredients:
    1 cup frozen strawberries
  • 1 frozen banana
  • 10 oz plain or vanilla yogurt (non dairy used here
  • 11/2 - 2 tsp pink pitaya powder from Ellie’s Best
  • Splash of vanilla
  • 1 scoop peanut butter or alternative
  • 1 - 2 tbsp maple syrup (optional)
  • 1 tbsp chia seeds
  • Splash of water or milk to soften when blending

Directions:

  1. Combine all ingredients and blend until smooth
  2. Add to a bowl and top with mango, blueberries and granola or toppings of choice!
