Cookies & Cream “Nice” Cream
Dark Chocolate Drizzle
Ingredients:
- 30 grams unsweetened chocolate
- 1 Tb coconut oil
- 2 Tb almond milk
- 2 Tb maple syrup
Instructions:
- Stir everything together in a small saucepan over the lowest heat until melted and smooth.
- Store extras in a sealed container in the fridge.
Chia Pudding
Ingredients:
- 1 cup almond milk
- 1/4 cup chia seeds
- 1/2 tsp vanilla bean paste
- 1 Tb maple syrup
- 1 Tb unsweetened coconut yogurt
Instructions:
- Stir all ingredients together.
- Set in the fridge for 2–3 hours until desired consistency is reached.
- Stir regularly to avoid clumps.
Nice Cream
Ingredients:
- 4 frozen bananas
- 2 Tb unsweetened coconut yogurt

2 homemade raw coconut mint chocolate cookies, crumbled
(cookies were made to use up coconut pulp after making coconut milk) - 1/2 tsp ground cinnamon
- 1/2 tsp vanilla bean paste
Instructions:
- Blend everything except the cookies.
- Add in the cookies at the end and blend until almost smooth, leaving a few chewy cookie bits.
Assembly Instructions:
- Add chia pudding to 2 serving glasses/jars.
- Top each with 4 tsp chocolate drizzle.
- Add nice cream on top.

Finish each with:
- 1 Tb additional chocolate drizzle
- Thick chunks of homemade chocolate

Chopped homemade caramel chocolate
