
Minty Blue Smoothie Bowl
Ingredients (Blended):
- 2 frozen bananas
- ¾ cup frozen riced cauliflower
- ½ fresh avocado
- 2 tablespoons unsweetened coconut yogurt
- 1 teaspoon vanilla extract
- 1 scant tablespoon blue spirulina powder from Ellie’s Best
- 1 scoop vanilla-lucuma protein powder
- ½ cup filtered water
- ½ tablespoon local maple syrup
Toppings:
- 1 teaspoon buckinis
- 2 teaspoons shredded coconut
- Fresh blueberries
- 1 crunchy mint dark chocolate square
- Fresh mint sprig
Instructions:
- Add all the smoothie ingredients to a blender and blend until ultra-smooth and creamy.
- Taste a spoonful or two to make sure the cauliflower is fully blended (no chunks!).
- Pour into a bowl and add your toppings: buckinis, shredded coconut, blueberries, dark chocolate, and a mint sprig.
- Serve cold and enjoy the minty-blue magic!
