Minty Blue Smoothie Bowl

Ingredients (Blended):

 

  • 2 frozen bananas
  • ¾ cup frozen riced cauliflower
  • ½ fresh avocado
  • 2 tablespoons unsweetened coconut yogurt
  • 1 teaspoon vanilla extract
  • 1 scant tablespoon blue spirulina powder from Ellie’s Best
  • 1 scoop vanilla-lucuma protein powder
  • ½ cup filtered water
  • ½ tablespoon local maple syrup

 

Toppings:

  • 1 teaspoon buckinis
  • 2 teaspoons shredded coconut
  • Fresh blueberries
  • 1 crunchy mint dark chocolate square
  • Fresh mint sprig

 

Instructions:

 

  1. Add all the smoothie ingredients to a blender and blend until ultra-smooth and creamy.
  2. Taste a spoonful or two to make sure the cauliflower is fully blended (no chunks!).
  3. Pour into a bowl and add your toppings: buckinis, shredded coconut, blueberries, dark chocolate, and a mint sprig.
  4. Serve cold and enjoy the minty-blue magic!
