Almond Meal Chocolate Chip Cookies

Ingredients:

•  Almond reserve from 2 cups (used Ellie’s Best Nut Milk Bag)
•  1 1/2cups oats
•  5 tbsp coconut oil
•  1/3 cup honey or other sweetener of choice
•  2 tbsp chia seeds
•  1/3 cup peanut butter (or other preferred nut/seed butter)
•  1 cup choc chips
•  Dash of fine salt and spices of choice (cinnamon, nutmeg, cloves used here)

 

Directions:

1.Mix ingredients well until combined and easy to shape into balls. If needed you can add a few drops of sweetener or oil until mixture sticks if too crumbly.

2.We roll into balls then flatten slightly to get a patty-like shape but you can go for your shape of choice.

3.Bake in pre-heated oven at 350F for 15 mins

4.Let cool down before refrigerating. Cookies will harden when cool. Enjoy!
