Turmeric Muffin Top Cookies
Ingredients:
- 1 1/2 cup GF all purpose flour
- 1 tbsp turmeric extract (sold on our site)
- 1/2 tsp ground cinnamon
- 1/2 tsp pumpkin pie spice
- 1 pinch of sea salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup coconut sugar
- 1/4 cup brown sugar
- 1/2 cup pumpkin puree
- 1/2 cup melted vegan butter
For coating:
- 1/4 cup coconut sugar
- 1 tbsp cinnamon
Directions:
- Mix wet ingredients
- Mix dry ingredients
- Combine ingredients
- Refrigerate batter for 20 minutes
- Preheat oven to 350 degrees
- Roll dough into golf ball sizes
- Roll them in the coating mixture until all surface is covered
- Drop them on a baking sheet about 1 1/2 inches apart
- Bake for 13 minutes
