Superfood Açaí Smoothie Bowl

Ingredients:

For the smoothie base:

  • 1 cup frozen mixed berries
  • 1 frozen banana (medium)
  • 1 tbsp açaí powder
  • ¾ cup homemade sweetened walnut milk (made using Ellie’s Best Nut Milk Bag)
  • 1 scoop chocolate-mint protein powder

For the toppings:

  • ¼ cup homemade orange-macadamia-coconut granola
  • 2 tbsp black raspberries (or regular raspberries)
  • 2 tbsp unsweetened coconut chips
  • ½ fresh banana, sliced
  • 1 tsp white chia seeds
  • 2 tbsp fresh passion fruit pulp (about 1 fruit)
  • 1 tbsp dried goji berries

Instructions:

 

  1. Blend the base:
    In a blender, combine frozen mixed berries, frozen banana, açaí powder, walnut milk, and protein powder. Blend until thick and smooth. Add a little extra walnut milk if needed for blending, but keep it thick for a smoothie bowl consistency.
  2. Pour into a bowl:
    Transfer the smoothie mixture to a bowl and smooth out the top.
  3. Add toppings:
    Arrange granola, black raspberries, coconut chips, banana slices, chia seeds, passion fruit pulp, and goji berries in rows or sections on top.
  4. Serve:
    Enjoy immediately with a spoon!
