Citrusy Chia Oat Bowl

Ingredients:

  • 3 tbsp chia seeds
  • 1 cup old-fashioned oats
  • 3 cups milk (dairy or plant-based)
  • ½ tsp vanilla extract
  • ½ tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp butterfly pea powder
  • 1 tbsp honey

 

 

Instructions:

  1. In a large mixing bowl, combine chia seeds, oats, milk, vanilla, lemon zest, lemon juice, butterfly pea powder, and honey.
  2. Stir well until everything is evenly mixed.
  3. Transfer mixture to an airtight container.
  4. Refrigerate overnight (or at least 6 hours) to allow the chia seeds and oats to soak and thicken.
  5. In the morning, stir well before serving.
  6. Top with granola, yogurt, and fresh fruit of your choice.
