
Citrusy Chia Oat Bowl
Ingredients:
- 3 tbsp chia seeds
- 1 cup old-fashioned oats
- 3 cups milk (dairy or plant-based)
- ½ tsp vanilla extract
- ½ tsp lemon zest
- 1 tbsp lemon juice
- 1 tsp butterfly pea powder
- 1 tbsp honey
Instructions:
- In a large mixing bowl, combine chia seeds, oats, milk, vanilla, lemon zest, lemon juice, butterfly pea powder, and honey.
- Stir well until everything is evenly mixed.
- Transfer mixture to an airtight container.
- Refrigerate overnight (or at least 6 hours) to allow the chia seeds and oats to soak and thicken.
- In the morning, stir well before serving.
- Top with granola, yogurt, and fresh fruit of your choice.
