
Spring Superfood Cookies
Ingredients:

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon salt
-
1/2 cup granulated sugar

2 eggs
-
1/4 cup vegetable oil
-
1/4 cup maple syrup
-
1 teaspoon blue spirulina powder (from Ellie’s Best)

1 tablespoon pink pitaya powder (also Ellie’s Best)

Chocolate eggs or decorative candy of choice
Directions:

Preheat the oven to 350°F (175°C).

In a large bowl, mix together the flour, baking powder, salt, and sugar.

In another bowl, whisk the eggs, vegetable oil, and maple syrup until combined.

Pour the liquid mixture into the dry ingredients and knead until a dough forms.

Divide the dough into two portions, placing each in a separate bowl.

Add 1 teaspoon blue spirulina powder to one portion and knead until fully combined.

Add 1 tablespoon pink pitaya powder to the other portion and knead until fully combined.

Knead each dough on a flat surface (preferably on a large sheet of parchment paper) to prevent sticking.

Roll out the dough and cut into shapes of your choice.

Place cookies about 1.5 inches apart on a baking sheet.

Decorate the tops with chocolate eggs or other candy.

Bake for 12 minutes.

Repeat with remaining dough until all cookies are baked.
Yield: About 23 cookies (~5-inch discs)
