Roasted Turmeric Potatoes
Ingredients:
- 1lb golden potatoes
- 3 tbsp olive oil
- 1 tsp cumin
- 1 tsp turmeric
- even layer of salt and pepper
- sprinkle of fresh rosemary and thyme
Side:
- 1/2 cup of labneh (sour yogurt)
- sprinkle of mint leaves
- 1 tbsp chopped scallion
- 10 sliced black olives
Directions:
- Quarter potatoes and toss in olive oil, cumin, turmeric, salt + pepper
- Sprinkle rosemary and thyme on them
- Roast potatoes on high heat until they're softened and skin is crispy
- For the side, add mint leaves, scallion and olives to the labneh and serve all together!
