Pumpkin Spice Almond Pulp Loaf
Ingredients:
- Leftover almond pulp from 2 cups raw almonds used to make homemade almond milk
- 1½ cups granulated sugar
- 4 tbsp butter, softened
- 2 cups all-purpose flour
- ½ tsp salt
- 1 tsp baking powder
- ½ tbsp pumpkin spice mix (cinnamon, nutmeg & cloves)
- 2 eggs, beaten
- 1 tsp vanilla extract
- Chocolate chips, as desired
Instructions:
- Preheat oven to 375°F (190°C). Grease a loaf pan or line with parchment paper.
- In a bowl, whisk together the flour, salt, baking powder, pumpkin spice, and almond pulp.
- In a separate bowl, cream together the softened butter and sugar. Beat in the eggs and vanilla.
- Fold the wet ingredients into the dry ingredients, mixing just until combined.
- Gently fold in the chocolate chips.
- Spread the batter evenly into the prepared loaf pan.
- Bake for about 30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool completely before slicing. Enjoy at room temperature or chilled.
