
Plant Based Smash Burger Tacos
Smash Burger Tacos (Plant-Based)
Ingredients
For the Burger:

1 package Impossible Ground (or ground turkey/chicken)
-
½ tsp garlic powder
-
½ tsp onion powder
-
½ tsp black pepper
-
½ tsp paprika
-
½ tsp cumin
-
½ tsp chili powder (no salt added)
-
½ tsp mushroom powder from Ellie’s Best
-
Oil for cooking
-
6 corn tortillas
Toppings:
-
Shredded lettuce
-
Diced onion
Special Sauce (No Salt Added "Animal/Mac Style")

2 tbsp plain nonfat Greek yogurt
-
2 tbsp vegan mayo (or regular mayo)
-
1 tsp yellow mustard
-
1 tsp low-sodium, no-sugar ketchup
-
¼ tsp paprika
-
¼ tsp onion powder
-
¼ tsp garlic powder
-
¼ tsp mushroom powder
Quick Dill Pickles (No Salt)
-
1 cucumber, peeled and sliced
-
1 tbsp minced garlic (jarred)
-
½ tsp dried dill weed
-
½ tsp onion powder
-
½ tsp black pepper
-
Apple cider vinegar (enough to cover cucumbers)
Instructions

Season the Meat: In a bowl, mix ground meat with all listed spices. Form into 6 balls.

Prepare the Pan: Preheat and lightly oil a cast iron pan over medium heat.

Smash the Tacos: Place a corn tortilla on the pan, add a meatball on top, and smash it flat using a spatula. Don’t press too thin to avoid crumbling.

Cook: Let cook until meat is browned and tortilla is crispy. Flip if needed. Repeat for all 6.

Make the Sauce: Mix all sauce ingredients in a bowl. Chill in fridge until ready to serve.

Make the Pickles: Combine cucumber slices with garlic, spices, and enough apple cider vinegar to cover. Store in fridge until ready to use.

Assemble: Top each smash burger taco with lettuce, diced onion, pickles, and sauce. Fold into taco shape and serve.
