Chocolate pumpkin truffles

Ingredients:

  • 1/2 cup almond butter
  • 1/3 cup pumpkin purée
  • 3 tbsp maple syrup
  • 1 1/2 cup almond flour or 1/3 cup coconut flour 
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon 
  • t tsp Ellies Best mushroom powder  (for added benefits)
  • 1 tsp Ellies Best turmeric powder (for color)
  • Dark chocolate chips 
  • 1-2 tsp coconut oil
  • Sea salt 

 

Directions:

  1. In a bowl, add almond butter, pumpkin purée and maple syrup. Mix until we’ll combined.
  2. Add flour, pumpkin pie spice, cinnamon, turmeric powder and mushroom powder. Mix well.
  3. Roll into balls and place on parchment paper. 
  4. Melt chocolate chips with coconut oil and dip the truffles to coat them, putting them back on parchment paper.
  5. Sprinkle some sea salt and more pumpkin pie spice if you’d like.
  6. Put it in the freezer for about 15-30 minutes and enjoy!
