
Chocolate PB Energy Bites
Ingredients:

2 cups almond meal (leftover from almond milk made using Ellie’s Best Nut Milk Bag)

½ cup melted coconut oil

½ cup pumpkin seeds

2 tbsp chia seeds
-
1 cup old-fashioned oats
-
Dash of salt
-
1 tsp cinnamon powder
-
2–3 tbsp sugar or preferred sweetener
-
½ cup semi-dark chocolate chips
-
1 tbsp vegetable oil
-
1 large scoop peanut butter
Instructions:
Toast the base
1.Spread the almond meal evenly on a baking sheet.
2.Sprinkle with coconut oil, pumpkin seeds, chia seeds, oats, salt, cinnamon, and sugar/sweetener.
3.Mix well to combine.
4.Bake at a high temperature (around 400°F / 200°C) for 30–40 minutes, or until lightly toasted.
5.Remove from the oven and let it cool completely.
Prepare the chocolate mixture
1.In a small bowl, melt the chocolate chips with vegetable oil.
2.Stir in the peanut butter until smooth and fully combined.
3.Combine and shape
4.Fold the chocolate–peanut butter mixture into the cooled toasted almond meal mixture.
5.Scoop and roll into bite-sized balls.
Chill
1.Place the balls on a tray and refrigerate until firm.
