Blue Overnight Oats

Ingredients:

 

  • 90 g quick-cooking oats
  • 2 Tb shredded coconut
  • 1 Tb white chia seeds
  • 1 tsp mixed berry superfood powder
  • 1 Tb blue spirulina powder from Ellie’s Best
  • 1 Tb raw pecans, broken into small pieces
  • 1 Tb fruit juice–sweetened dried cranberries
  • 15 drops vanilla crème liquid stevia
  • 290 mL homemade date-sweetened vanilla bean almond milk (no need to strain if you don’t feel like it)

Instructions:

  1. Add all ingredients to a large jar.
  2. Mix well.
  3. Cover with a lid and refrigerate overnight.

 

Toppings (Next Day)

 

  • Fresh local blueberries
  • Fresh golden berries
  • 1 fresh fig
  • 1/8 tsp puffed quinoas
