Blue Overnight Oats
Ingredients:
- 90 g quick-cooking oats
- 2 Tb shredded coconut
- 1 Tb white chia seeds
- 1 tsp mixed berry superfood powder
- 1 Tb blue spirulina powder from Ellie’s Best
- 1 Tb raw pecans, broken into small pieces
- 1 Tb fruit juice–sweetened dried cranberries
- 15 drops vanilla crème liquid stevia
- 290 mL homemade date-sweetened vanilla bean almond milk (no need to strain if you don’t feel like it)
Instructions:
- Add all ingredients to a large jar.
- Mix well.
- Cover with a lid and refrigerate overnight.
Toppings (Next Day)
- Fresh local blueberries
- Fresh golden berries
- 1 fresh fig
- 1/8 tsp puffed quinoas
