Almond Meal Pancakes
Ingredients:
- 1 cup almond meal (reserve - used Ellie’s Best Nut Milk Bag to strain)
- 1 cup heavy cream
- 2 eggs
- 1/2 cup all-purpose flour
- Splash of vanilla extract
- 1/2 tsp baking powder
- Sprinkle of cinnamon powder
- Splash of maple syrup
- Grease for the flat pan
Instructions:
- Add the almond meal reserve to a bowl.
- Add 1 cup heavy cream, 2 eggs, 1/2 cup all-purpose flour, a splash of vanilla extract, 1/2 tsp baking powder, a sprinkle of cinnamon powder, and a splash of maple syrup.
- Mix until combined.
- Cook on a greased flat pan on the stovetop until bubbly and somewhat dry.
- Flip over and continue cooking.
- Enjoy with berries and more maple syrup.
