Almond Meal Pancakes

Ingredients:

  • 1 cup almond meal (reserve - used Ellie’s Best Nut Milk Bag to strain)
  • 1 cup heavy cream
  • 2 eggs
  • 1/2 cup all-purpose flour
  • Splash of vanilla extract
  • 1/2 tsp baking powder
  • Sprinkle of cinnamon powder
  • Splash of maple syrup
  • Grease for the flat pan

 

 

 

Instructions:

 

  1. Add the almond meal reserve to a bowl.
  2. Add 1 cup heavy cream, 2 eggs, 1/2 cup all-purpose flour, a splash of vanilla extract, 1/2 tsp baking powder, a sprinkle of cinnamon powder, and a splash of maple syrup.
  3. Mix until combined.
  4. Cook on a greased flat pan on the stovetop until bubbly and somewhat dry.
  5. Flip over and continue cooking.
  6. Enjoy with berries and more maple syrup.
