“Swiftie” themed donuts
Donut Ingredients:
- 6 eggs
- 1 tbsp vanilla extract
- 1/3 cup coconut oil, melted
- 1/3 cup coconut cream (the thick part at the top of a can of chilled coconut milk), melted
- 2/3 cup raw honey
- 2 cups almond flour
- 1/4 cup coconut flour
- 1 tsp baking powder
Sweet Cream Cheese Icing Ingredients:
- 4 oz cream cheese, softened
- 1.5 tbsp grass-fed butter, melted
- 2 tsp maple syrup
- 1 tsp @elliesbest beet powder
Other Ingredients:
- white chocolate chips (@lilys_sweets for no added sugar)
- dark chocolate or food markers
- sprinkle balls (1989-blue/turquoise, Fearless-Yellow/Gold, Speak Now-Red, Reputation-Black, Lover-Pink, Folklore-White/Light Gray, Evermore-Brown, Midnights-Dark Blue, Taylor-Mint Green, Eras-All Colors)
Directions:
- Preheat the oven to 350F. Lightly grease 2 silicone donut molds.
- Blend together the eggs, vanilla, coconut oil, coconut milk, and honey until smooth. Add in the flour and baking powder and mix together.
- Pour the batter into the donut molds until they're 2/3 full and bake for 18-20 minutes, or until a toothpick comes out clean.
4. While baking, blend together the icing ingredients. Microwave at 10 second intervals until the icing is slightly drippy. Write letters on the white chocolate chips using a black food marker or a toothpick dipped in dark chocolate.
5. Once cool, dip the donuts in the melted icing. Add the white chocolate chip letters and colored sprinkle balls to form bracelets.
