Strawberry Cheesecake Parfait
Ingredients:
- 5-7 strawberries
- 1 tbsp lemon juice
- 1 tsp lemon zest
- Honey
- Graham crackers
- 1/4 cup melted butter
- 8 oz pack cream cheese (I used dairy free)
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 1-2 tsp beet root powder (for natural food coloring)
- 2 tbsp powdered sugar (for more sweetness)
- Semi-sweet chocolate chips
Directions:
1. Cut strawberries into bite size pieces (heart strawberries are optional). In a bowl, add strawberries, lemon juice, lemon zest, and honey. Mix and set aside.
2. Add graham crackers in a bag and crush using a rolling pin. Melt the butter and mix graham cracker crumbs in and set aside.
3. In another bowl, add cream cheese and mix. Add vanilla extract, maple syrup and beet root powder (1/2 tsp at a time to get your desired pink color). Add powdered sugar and mix until combined.
4. Assemble the parfait: layer of cream cheese mixture, graham cracker crumbs, strawberries, chocolate chips. Repeat layers one more time.
5. Chill in the fridge for 20-30 minutes and enjoy!
