Mushroom Extract Gravy
Ingredients
- 2 cups of turkey or chicken drippings (or use broth as a substitute)
- 1/4 cup all-purpose flour
- 3 heaping tablespoons Vital 7 Mushroom Blend Extract Powder (or more to taste)
- 1/4 cup butter or drippings from roasting
- Salt and pepper to taste

Prepare the Mushroom Extract: In a small bowl, combine the mushroom extract powder with a few tablespoons of warm water. Stir until it forms a smooth paste. Set it aside.

Deglaze the Pan: If you're using drippings from roasting, pour them into a saucepan and place it over medium heat. If not, use chicken or turkey broth as a base. Heat the liquid until it simmers.

Create the Roux: In a separate saucepan, melt the butter or use the drippings from roasting over medium-low heat. Gradually add the flour while whisking continuously to create a smooth paste called a roux. Cook the roux for 2-3 minutes until it turns a light golden color.

Combine the Extract: Add the mushroom extract paste to the roux, stirring constantly to incorporate it into the mixture. Taste and and if needed more mushroom extract to taste.

Make the Gravy: Slowly pour the hot drippings or broth into the roux and mushroom extract mixture while whisking continuously. Continue to cook and whisk until the gravy thickens, usually for about 5-7 minutes. If the gravy is too thick, you can add more broth or water to reach your desired consistency.

Season to Taste: Season the gravy with salt and pepper to taste. Remember that the turkey or chicken drippings may already have some salt, so adjust accordingly.
