Date Truffles

Ingredients:

-2 cups pitted dates 

-1 cup Ellie’s Best Almonds 

-3-4tbsp cocoa powder 

-2-3tbsp cinnamon 

-2tsp vanilla extract 

-3-4 cups boiling water


Directions:

  1. Cover and soak dates in boiling hot water for about 30-45 min or until very soft.
  2. Add to a  food processor and blend until smooth and no chunks.
  3. Make into bite size balls.
  4. Blend the almonds until they are in very tiny pieces (like crumbs but not too fine) and place on a plate.
  5. Mix the cinnamon and cocoa together and put on a plate.
  6. Roll the date balls until coated in the almonds or cocoa (or both).
  7. Place in the fridge for about 2 hours or overnight until not so soft.
  8. Enjoy!☺️
