Date Truffles
Ingredients:
-2 cups pitted dates
-1 cup Ellie’s Best Almonds
-3-4tbsp cocoa powder
-2-3tbsp cinnamon
-2tsp vanilla extract
-3-4 cups boiling water
Directions:
- Cover and soak dates in boiling hot water for about 30-45 min or until very soft.
 - Add to a food processor and blend until smooth and no chunks.
 - Make into bite size balls.
 - Blend the almonds until they are in very tiny pieces (like crumbs but not too fine) and place on a plate.
 - Mix the cinnamon and cocoa together and put on a plate.
 - Roll the date balls until coated in the almonds or cocoa (or both).
 - Place in the fridge for about 2 hours or overnight until not so soft.
