
Cookie Monster Yogurt Bark
Ingredients:

2 cups Greek yogurt, mixed with raw honey

12 mini chocolate chips

3 dark chocolate disks (or melted dark chocolate circles, frozen)

1 tsp blue spirulina from Ellie’s Best

3 chocolate chip cookies (e.g., GF sourdough chocolate chip cookies)
Directions:

Make the Eyes:

On a parchment-lined baking sheet, place 12 small dots of yogurt.

Gently press a mini chocolate chip into the center of each dot to form “eyes.”

Freeze for at least 10 minutes until hardened. (Tip: You can also use store-bought candy eyes if preferred.)

Color the Yogurt:

Mix the remaining yogurt with blue spirulina until you reach your desired Cookie Monster hue.

Create the Bark Base:

Spread the blue yogurt mixture evenly over a parchment-lined baking sheet.

Decorate:

Cut the chocolate disks in half.

Arrange two yogurt-chip eyes and a half chocolate disk to create Cookie Monster faces across the bark.

Crumble the cookies and scatter them in the empty spaces to mimic cookie crumbs.

Freeze and Serve:

Freeze for at least 2 hours or until fully set.

Once frozen, break or cut into pieces.

Serve immediately (they melt quickly!).
