Coconut Lime Pops

Ingredients:

(Makes ~6 pops)

 

   •   1½ cups homemade coconut milk (strained with your Ellie’s Best nut milk bag)

   •   4–5 soft pitted dates (soaked in warm water for 10 minutes if needed)

   •   Juice of 2 limes (about 1/4 cup)

   •   Zest of 1 lime

   •   Pinch of sea salt

   •   Optional: ½ tsp vanilla extract for a hint of warmth

Instructions:

    1.    Blend coconut milk and dates until completely smooth and creamy.

    2.    Add lime juice, zest, salt, and vanilla (if using). Blend again to combine.

    3.    Taste and adjust: Want it sweeter? Add another date. Tangier? A splash more lime.

    4.    Pour into popsicle molds and insert sticks.

    5.    Freeze for at least 4–6 hours or overnight.

    6.    Release by running warm water over the molds.
