Butterfly Pea Flower Yogurt Bark
Ingredients:
- 2 cups yogurt (I used a vanilla bean cashew & coconut yogurt)
- 2 teaspoons butterfly pea powder
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup shredded coconut
- 1/4 cup sliced almonds (or any nut of choice)
- 1/4 cup blueberries
- Mini dark chocolate chips
- 2 teaspoons hemp seeds (or chia seeds)
Directions:
1. In a bowl, mix the yogurt, maple syrup and vanilla extract until well combined. This is going to be the white base.
2. In another bowl, mix the yogurt, maple syrup, vanilla extract and butterfly pea powder until combined. You should get a nice blue color.
3. Pour the yogurt mixture for the base onto some parchment paper spreading an even layer. The shape doesn’t have to be perfect!
4. Using a spoon, put some of the blue yogurt mixture in random spots then spread around with a fork to create that marble look.
5. Add toppings: blueberries, mini chocolate chips, sliced almonds, shredded coconut and hemp seeds.
