Blue Spirulina Muffins
Ingredients:
What you'll need (makes 12 muffins)
- 1 ¾ cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup butter, softened
- ¾ cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup milk
- ½ cup plain yogurt
- 1 tsp blue spirulina powder from Ellie’s Best (for that magical blue!)
Directions:
- Preheat the oven to 375°F (190°C) and line a muffin tin.
- Whisk the dry ingredients (flour, baking powder, baking soda, salt) in one bowl.
- In another bowl, beat butter and sugar until fluffy, then mix in the eggs and vanilla.
- Gently combine the dry ingredients with milk, yogurt, and blue spirulina powder.
- Scoop the batter into muffin cups and bake for 18-20 minutes.
- Let them cool, then enjoy!
