Blue Spirulina Muffins

Ingredients:

What you'll need (makes 12 muffins)

  • 1 ¾ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • ½ cup plain yogurt
  • 1 tsp blue spirulina powder from Ellie’s Best (for that magical blue!)

Directions:

  1. Preheat the oven to 375°F (190°C) and line a muffin tin.
  2. Whisk the dry ingredients (flour, baking powder, baking soda, salt) in one bowl.
  3. In another bowl, beat butter and sugar until fluffy, then mix in the eggs and vanilla.
  4. Gently combine the dry ingredients with milk, yogurt, and blue spirulina powder.
  5. Scoop the batter into muffin cups and bake for 18-20 minutes.
  6. Let them cool, then enjoy!
