Almond Meal Energy Cookies
Don't toss your almond pulp next time you make almond milk, instead use it to make these almond meal energy cookies! Even the kids love them 🤩
Ingredients:
- 1 cup drained almond meal (milk strained leftover)
- 1/4 cup sugar of choice
- 3-4 tbsp almond butter
- 1/4 tsp fine salt
- 1/4 tsp cinnamon
- Drop of almond extract (optional)
- 2 tbsp liquid coconut oil
- 1 flax egg
- Handful raisins (optional, or use other dried fruit)
- Handful chocolate chips (optional)
Directions:
- Mix ingredients thoroughly
- Line a baking pan with parchment paper
- Roll almond cookie dough into balls and space about 2 " apart
- Flatten slightly with the base of a cup or back of a for
- If baking, bake at 375f for 25 mins, or until they start to brown
- If not baking, just refrigerate!
- When ready to serve, drizzle chocolate or nut butter of choice
- Enjoy!!
