
Vegan Pumpkin Pie
Believe it or not, this homemade pumpkin pie is free of refined-sugar, gluten-free, and 100% vegan. Yeah, @healthwithacrunch DID THAT 🤤 🥧🎃🍁
Ingredients
Crust:
- 3 cups oat flour
- 1/2 cup maple syrup
- 3/4 cup water (plus more as needed)
Filling:
- 1 + 1/2 cup of pumpkin puree
- 16-18 pitted dates
- 1/2 cup homemade rice milk (or any plant-based milk)
- 1 tbsp vanilla extract
- 1 tsp pumpkin pie spice or cinnamon
Directions:
- Blend the oats to make your oat flour
- Mix the flour with the maple syrup and water in a medium sized bowl until a dough consistency forms
- Shape the dough around your pie pan to create what will later be the crust
- Now blend the dates and plant-based milk until a paste forms
- Mix this paste with the pumpkin puree, vanilla extract, and pumpkin pie spice or cinnamon in a large bowl
- Pour the filling into the crust
- Bake on 475 Fahrenheit for 20 to 25 minutes
