Raspberry Lemon Tahini Blondies

Enjoy the pure goodness of making your own jam and using it to bake a delicious Blondies. 

Ingredients

  • 2/3 cup organic tahini⁣⠀
  • 1/3 cup coconut sugar⁣⠀
  • 1 egg⁣⠀
  • Zest and juice from half a lemon⁣⠀
  • 1/4 cup homemade almond milk⁣⠀
  • 3/4 cup almond flour⁣⠀
  • 1 tbsp coconut flour⁣⠀
  • 1/2 tsp baking soda⁣⠀
  • 1/2 tsp cinnamon⁣⠀
  • 1/4 tsp ginger⁣⠀
  • Pinch of sea salt⁣

Homemade raspberry chia jam:

  • Handful of frozen organic raspberries
  • 1 tsp chia seeds


Instructions

Homemade raspberry chia jam:

  1. Microwave for 30 seconds (or longer on a stovetop) a handful of frozen organic raspberries
  2. Crush with a fork and mix in about 1 tsp chia seeds.
  3. Put it in the fridge to thicken.⁣⠀
Blondies:
  1. Beat together the tahini and coconut sugar, then add the egg, lemon juice, and almond milk⁣⠀
  2. Fold in the spices, baking soda, zest, and almond & coconut flours⁣⠀
  3. Spread in a parchment paper lined loaf pan⁣⠀
  4. Swirl the chia jam on top⁣
  5. Bake at 350 for about 30 minutes. Let cool completely.

Note: Recipe makes 8 squares.
