Pumpkin Spice Donuts


  • 1c white wheat flour (sub all-purpose or gf flour)
  • 1/3c pumpkin puree
  • 2tsp pumpkin pie spice
  • 1tsp baking powder
  • 1/4tsp baking soda
  • 1/4tsp salt
  • 1/2c homemade almond milk
  • 1/3c coconut sugar
  • 1/2tsp vanilla extract
  • 2tbsp coconut oil (melted)
Maple glaze
  • 2tbsp coconut butter
  • 2tbsp maple syrup


  1. Preheat oven to 375F and grease a donut pan
  2. In a medium bowl, combine dry ingredients
  3. In a large bowl, stir together wet ingredients
  4. Add dry ingredients to wet and mix until just combined (don’t overmix!)
  5. Spoon or pipe batter into donut moulds and fill each 3/4 way full
  6. Bake for 10mins or until toothpick comes out clean. Allow donuts to cool completely before frosting
  7. For glaze, mix coconut butter & maple syrup in a shallow bowl. Dip cooled donuts into glaze and place on a cooling rack for about 20 mins to allow glaze to set.
