
Pumpkin Spice Donuts
Ingredients:
- 1c white wheat flour (sub all-purpose or gf flour)
- 1/3c pumpkin puree
- 2tsp pumpkin pie spice
- 1tsp baking powder
- 1/4tsp baking soda
- 1/4tsp salt
- 1/2c homemade almond milk
- 1/3c coconut sugar
- 1/2tsp vanilla extract
- 2tbsp coconut oil (melted)
- 2tbsp coconut butter
- 2tbsp maple syrup
Directions:
- Preheat oven to 375F and grease a donut pan
- In a medium bowl, combine dry ingredients
- In a large bowl, stir together wet ingredients
- Add dry ingredients to wet and mix until just combined (don’t overmix!)
- Spoon or pipe batter into donut moulds and fill each 3/4 way full
- Bake for 10mins or until toothpick comes out clean. Allow donuts to cool completely before frosting
- For glaze, mix coconut butter & maple syrup in a shallow bowl. Dip cooled donuts into glaze and place on a cooling rack for about 20 mins to allow glaze to set.
