Pumpkin Crumble Pie Bars

Looking for a dessert that is flavorful, dense, moist and delicious? Well look no further! These pumpkin crumble pie bars are perfect for any occasion and are just as good as they sound. 

Ingredients

Cake:⁠

  • ⁠3/4 cup canned pumpkin⁠⠀
  • 1/4 cup coconut oil, melted⁠⠀
  • 1/4 cup raw organic honey⁠⠀
  • 1 cup blanched almond flour⁠⠀
  • 1/4 cup organic coconut flour⁠⠀
  • 4 eggs ⁠⠀
  • 1 scoop Bone Broth Protein Turmeric powder ⁠⠀
  • 1 tsp pure baking soda
  • 1 tsp vanilla extract ⁠⠀
  • 1 tsp organic cinnamon⁠⠀
  • 1/2 tsp sea salt and nutmeg⁠⠀


Crumble:⁠⠀

  • 3/4 cup blanched almond flour ⁠⠀
  • 1/4 cup organic coconut flour ⁠⠀
  • 3 tbsp coconut sugar⁠⠀
  • 1 tsp organic cinnamon⁠⠀
  • 2 tbsp coconut oil, melted ⁠⠀
  • 1/4 cup raw organic honey⁠⠀


Cinnamon vanilla-honey glaze:⁠

  • 3 tbsp artisanal coconut butter⁠⠀
  • 1 tbsp coconut oil⁠⠀
  • 1 tbsp raw organic honey ⁠⠀
  • 1 tbsp homemade almond milk ⁠⠀
  • 1 tsp pure vanilla extract⁠⠀
  • 1/2 tsp organic cinnamon ⁠⠀


Directions⠀

  1.  Preheat the oven to 325F and line a 9x9 baking pan with parchment paper.⁠⠀
  2. Make the crumble topping first, in a bowl, combine all of the ingredients together. Mix well, it should resemble wet sand. Set it aside.⁠⠀
  3. In a food processor, combine all of your ingredients for the cake together. Mix until no dry pockets remain. ⁠⠀
  4. Pour into prepared pan and top with the crumble topping. ⁠⠀
  5. Bake for 50-55 minutes (always do the toothpick test!) ⁠⠀
  6. While your cake bakes, heat the coconut butter and coconut oil in a saucepan over a medium heat. Whisk in the honey, milk, vanilla extract and cinnamon. Whisk ingredients together over a low heat until you get a thick glaze to form. Set aside.⁠⠀
  7. Let the cake cool for about 20 minutes before cutting and separating the bars.⁠⠀
  8. Drizzle your glaze and devour (or store in the fridge after the first day!)

Hi Monica,

Yes you can use turmeric powder instead of the bone broth protein powder! It will make it a stronger pumpkin spice flavor, yum!

Can you just use turmeric powder if you don’t have Bone Broth Protein Turmeric powder ⁠on hand? (I also don’t want to run out and buy and ingredient I may only be using once.)
