Pumpkin Chocolate Chip Muffins

Ingredients

  • 2 TBL flax meal + 4 TBL water, combined to make flax egg⁣
  • 1/3 cup homemade almond milk
  • 1 tsp apple cider vinegar⁣
  • 3 TBLS of tahini ⁣
  • 1 tsp vanilla⁣
  • 1 cup of pumpkin puree⁣
  • 3 TBLS of maple syrup ⁣
  • 1 1/2 cups of oat flour ⁣
  • 1 1/2 cups of almond meal⁣
  • 1 tsp baking soda⁣
  • 1/2 tsp of baking soda⁣
  • 1 tsp cinnamon⁣
  • 2 tsp of pumpkin pie spice⁣
  • 1 tsp cinnamon⁣
  • 1/4 tsp salt⁣
  • 1/2 cup of dark chocolate chips⁣

Instructions

  1. Preheat oven to 350°. Grease your muffin tins or add a liner to each spot.⁣
  2. In medium bowl combine all wet ingredients and stir until smooth.⁣
  3. In larger bowl combine all dry ingredients ( except chocolate chips).⁣
  4. Slowly add your wet ingredients into your dry ingredients and mix until smooth.⁣
  5. Gently fold in your chocolate chips⁣
  6. Pour or scoop batter 3/4 into each muffin hole.⁣
  7. Bake for 30 mins. Once done remove and let cool completely. Store in fridge for up to 5 days or so. ⁣
