Pecan Pie Oatmeal Bake

Ingredients:

Oatmeal Bake

  • 2c rolled oats
  • 2c homemade almond milk
  • 1 egg (flax egg for vegan)
  • 1/3c chopped pecans
  • 1/4c pure maple syrup
  • 1tbs melted coconut oil
  • 1.5tsp vanilla extract
  • 1tsp baking powder
  • 1/4tsp salt
  • 1tsp cinnamon
  • 1/4tsp nutmeg
Topping
  • 1tbs melted coconut oil
  • 1/3c chopped pecans
  • 1-2tbs maple syrup
  • 1tsp cinnamon

Directions:

  1. Preheat oven to 375F and grease an 8x8 baking dish
  2. In one bowl, dry ingredients
  3. In another bowl, combine wet ingredients
  4. Add wet ingredients to dry and stir to combine
  5. While mixture is sitting, mix together topping ingredients a small bowl.
  6. Heat a pan on medium heat with coconut oil. Add topping mixture and bring to a low simmer. Cook about 5mins
  7. Pour oat mixture into baking dish and press down to ensure oats are fully soaked. Scatter pecan topping on top.
  8. Bake at 375F for about 40mins until top is lightly golden brown
