Oat Pulp Brownies
Ingredients
- 1 Medium Sweet Potato
- 1/2 Cup Cacao Powder
- 1/2 Cup Almond Flour
- 1/3 Cup Raw Cane Sugar
- 1/2 Cup Oat Milk Pulp
- 1 Tsp Baking Powder
- 1/2 Tsp Cinnamon
- Pinch of Salt
- 2 Tsp Vanilla Extract
- 1/2 Cup Homemade Vegan Milk
Instructions
- Start by preheating the oven to 375F and bring a small pot of water to a boil to steam your sweet potato. Peel and cube your sweet potato.
- Take the steamed sweet potato and mash it or puree it in a blender. Take the puree sweet potato and slowly mix in the cacao powder a little bit at a time. Once it’s all combined at the oat milk pulp, raw cane sugar, vanilla, and vegan milk. Mix it all up.
- In a separate bowl add the almond flour, baking powder, cinnamon, and salt. Once that is combine at the dry ingredients to the wet ingredients and mix until everything is combined.
- Pour it into a greased baking pan and bake for 30 minutes. Let cool and then enjoy, preferably with vegan ice cream on top!
