Key Lime Ice Cream Bars

Ingredients

Crust:

  • 1 cup raw macadamia nuts or cashews
  • 6 dates pitted
  • 1 cup unsweetened coconut
  • Pinch of sea salt

Filling:

  • 1 cup leftover cashew milk pulp with ½ cup soaked cashews
  • ½ cup coconut milk
  • ½ cup fresh lime juice
  • ¼ cup coconut oil
  • ¼ cup honey (or maple syrup)
  • 1 tsp matcha for coloring

Directions

Crust:

1. In a food processor, combine:
  • 1 cup raw macadamia nuts or cashews
  • 6 dates pitted
  • 1 cup unsweetened coconut
  • Pinch of sea salt
2. Press into an 8x8 pan lined with parchment paper and store in the freezer.

 

Filling:⠀

1.In a food processor, combine:

  • 1 cup leftover cashew milk pulp with ½ cup soaked cashews
  • ½ cup coconut milk
  • ½ cup fresh lime juice
  • ¼ cup coconut oil
  • ¼ cup honey (or maple syrup)
  • 1 tsp matcha for coloring

2. Pour and freeze. 
3. Cut into bars and share!⚡️
