Hazelnut Cacao Nut Pulp Granola

Ingredients:

*milk*⁠⠀

  • 1 cup roasted hazelnuts, soaked for 4 hours⁠⠀
  • 1 1/3 cup water⁠⠀
  • 1/4 tsp vanilla extract⁠⠀
  • 1-2 tbsp maple syrup (optional)⁠⠀

*granola*⁠⠀

  • 1 2/3 cup old fashioned oats⁠⠀
  • 1/3 maple syrup
  • 1/4 cup roasted hazelnuts, crushed⁠⠀
  • 2 tbsp cacao powder⁠⠀
  • 2 tbsp cacao nibs⁠⠀
  • 3 tbsp chia seeds⁠⠀
  • 3 tbsp hemp seeds⁠⠀
  • 1/2 tbsp homemade hazelnut milk, or as necessary⁠⠀

Directions:⁠⠀


*milk*⁠⠀

  1. Add soaked hazelnuts, 1 1/3 cup water, and vanilla extract to a blender until smooth.⁠⠀
  2. Strain with your Bigger Better Nut Milk Bag. Squeeze gently to get out all of the liquid.⁠⠀


*granola*⁠⠀

  1. Preheat the oven to 375°. Transfer the leftover hazelnut grounds that are in the nut milk bag or cheese cloth into a large mixing bowl, then stir in the oats, maple syrup, crushed hazelnuts, cacao powder, cacao nibs, chia seeds, and hemp seeds. ⁠⠀
  2. Add hazelnut milk as necessary to help the mixture combine (about 1/2 tbsp). ⁠⠀
  3. Transfer the granola mix to a large baking sheet and spread into a thin, even layer. (you do not want too thick of a layer because not all of the mix with crisp up like a granola). ⁠⠀
  4. Bake for about 35-45 minutes, depending on how crisp you want the granola. If you want it pretty crisp leave it for 40 minutes on 375° then turn off the oven to cool down, but leave the granola in the oven until the oven is completely cooled.⁠⠀
  5. Enjoy on any and everything!
