Corn Pasta Salad with Creamy Cashew Tahini Alfredo
- 1 box of pasta of choice
- 1 corn, boiled
- 3 small tomatoes
- 1/2 avocado
- Fresh basil (or herb of choice)
- 1/4 cup tahini
- 2 tbsp homemade almond milk
- 1/4 cup toasted cashews
- 1/2 tsp garlic powder
- Lemon juice to taste
- 1/2 tsp black pepper
- Cook pasta to package instructions.
- Chill it while you make the sauce in your blender.
- Put it all together and garnish with basil and dried oregano.
