Corn Pasta Salad with Creamy Cashew Tahini Alfredo

Ingredients:

  • 1 box of pasta of choice
  • 1 corn, boiled  
  • 3 small tomatoes 
  • 1/2 avocado  
  • Fresh basil (or herb of choice) 

Sauce*

  • 1/4 cup tahini
  • 2 tbsp homemade almond milk
  • 1/4 cup toasted cashews
  • 1/2 tsp garlic powder
  • Lemon juice to taste
  • 1/2 tsp black pepper 

 

Directions:

  1. Cook pasta to package instructions.
  2. Chill it while you make the sauce in your blender.
  3. Put it all together and garnish with basil and dried oregano.
