Cookie Monster Chickpea Cookie Dough
- 1/2 Cup Quick Oats
- 1 1/2 Cup Chickpeas
- 1/4 Cup Cashew Butter
- 1/4 Cup Maple Syrup
- 1 Teaspoon Vanilla Extract
- 2 Teaspoons Blue Spirulina
- 2-3 Chocolate Chip Cookies
In a food processor, blend the oats into a flour.
Add the chickpeas, cashew butter, maple syrup, vanilla extract, and spirulina. Blend until smooth.
Crumble the chocolate chip cookies into small chunks.
Transfer the cookie dough into a bowl and sprinkle with cookie chunks. Enjoy!
