
Coconut Pitaya Superfood Cookies
Ingredients
- 1/4 cup coconut flour ⠀
- 1/4 cup blanched almond flour⠀
- 1/4 cup fresh coconut fruit & veg protein powder⠀
- 1 tsp Ellie’s Best Pink Pitaya powder
- 1 tsp baking powder⠀
- 1/4 tsp sea salt⠀
- 1/4 cup watermelon seed butter⠀
- 1/4 cup maple syrup ⠀
- 2 eggs⠀
Instructions
- Throw everything in a food processor & blend until smooth⠀
- Scoop dough on to a cookie sheet & bake at 350F for 8 mins!⠀
