Coconut Pitaya Superfood Cookies

Ingredients

  • 1/4 cup coconut flour ⁠⠀
  • 1/4 cup blanched almond flour⁠⠀
  • 1/4 cup fresh coconut fruit & veg protein powder⁠⠀
  • 1 tsp Ellie’s Best Pink Pitaya powder⁠
  • 1 tsp baking powder⁠⠀
  • 1/4 tsp sea salt⁠⠀
  • 1/4 cup watermelon seed butter⁠⠀
  • 1/4 cup maple syrup ⁠⠀
  • 2 eggs⁠⠀

Instructions

  1. Throw everything in a food processor & blend until smooth⁠⠀
  2. Scoop dough on to a cookie sheet & bake at 350F for 8 mins!⁠⠀
