Coconut Mango Ice Cream Cake

Ingredients:

Crust:

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 1/2 cup flour

Coconut layer:

  • 2 cups coconut milk ( I made my own homemade coconut milk using @elliesbest milk nut bag)
  • 2 cups whipped cream
  • 1/2 icing sugar
  • 4 tsp agar powder (1/2 cup cold water and 1/2 cup boiling water to dissolve it) you also can use gelatine powder.

Mango layer:

  • 3 cups freshly made mango purée
  • 3 tbsp agave
  • 1 tsp vanilla extract
  • 4 tsp agar powder (1/2 cup cold water and 1/2 cup boiling water to dissolve it) you also can use gelatine powder.

Directions:

1.Cream butter with sugar and vanilla, mix in flour, form dough.

2.Press the dough into pan, bake at 350 F for 40-50 min. until it’s golden brown. Cool it down completely.

3.Mix whipped cream and icing sugar, add coconut milk, dissolved agar powder, pour it over the crust. Put in a fridge, meanwhile prepare the mango layer.

4.Mix mango purée, vanilla and agave, add dissolved agar powder. Take the cake out of the fridge, make sure that the coconut layer is set.

5.Pour mango layer on top of it. Chill and enjoy. I put my cake in a freezer and turned it into an ice cream cake, you can do the same.
