
Cinnamon Crumble Muffins
Ingredients
For the muffins
- 1 3/4 cup brown rice flour⠀⠀
- 1/4 cup coconut oil (melted) ⠀⠀
- 1/2 cup maple syrup ⠀⠀
- 2 eggs (or flax eggs)
- 1/2 cup homemade unsweetened cashew milk ⠀⠀
- 2 tsp baking powder⠀⠀
- 1 tsp vanilla extract ⠀⠀
- 1/4 tsp salt ⠀⠀
- 1 tsp cinnamon⠀
⠀
For the crumble
- 1/4 cup coconut sugar⠀⠀
- 1/4 cup ground pulp from homemade nut milk⠀⠀
- 1 tsp cinnamon ⠀⠀
- 1 tbsp coconut oil (not melted) ⠀
Instructions
- Combine wet and dry muffin ingredients separately, then add dry to liquid gradually until well combined⠀⠀
- For the crumble, add all ingredients to a small bowl and using the back of a fork, press coconut oil into dry ingredients until crumbly⠀⠀
- Add batter to the lined muffin tin, top with crumble and bake on 350 for 25 minutes⠀
