Cinnamon Crumble Muffins

Ingredients

For the muffins

  • 1 3/4 cup brown rice flour⠀⠀
  • 1/4 cup coconut oil (melted) ⠀⠀
  • 1/2 cup maple syrup ⠀⠀
  • 2 eggs (or flax eggs)
  • 1/2 cup homemade unsweetened cashew milk ⠀⠀
  • 2 tsp baking powder⠀⠀
  • 1 tsp vanilla extract ⠀⠀
  • 1/4 tsp salt ⠀⠀
  • 1 tsp cinnamon⠀


For the crumble

  • 1/4 cup coconut sugar⠀⠀
  • 1/4 cup ground pulp from homemade nut milk⠀⠀
  • 1 tsp cinnamon ⠀⠀
  • 1 tbsp coconut oil (not melted) ⠀


Instructions

  1. Combine wet and dry muffin ingredients separately, then add dry to liquid gradually until well combined⠀⠀
  2. For the crumble, add all ingredients to a small bowl and using the back of a fork, press coconut oil into dry ingredients until crumbly⠀⠀
  3. Add batter to the lined muffin tin, top with crumble and bake on 350 for 25 minutes⠀
