Chunky Monkey Protein Oats
- 1/2 cup oats
- 1 cup homemade almond milk
- 1/2 mashed banana
- Vegan protein powder
- Caramelized banana coins
- Coconut oil
- Pumpkin seeds
- Unsweetened coconut chips
- Raw almond butter
- In a pot, combine 1/2 cup oats with 1 cup homemade almond milk
- Bring to a boil then reduce to simmer.
- Add in lots of cinnamon + 1/2 mashed banana.
- Once it’s thick, add in one serving of vegan protein powder and another splash of nut milk and stir well.
- Caramelize banana coins in pan on medium-low with coconut oil.
- Top with caramelized banana coins + pumpkin seeds + pecans + unsweetened coconut chips + a drizzle of raw almond butter and serve.
