Chunky Monkey Protein Oats

Ingredients

  • 1/2 cup oats
  • 1 cup homemade almond milk
  • Cinnamon
  • 1/2 mashed banana
  • Vegan protein powder
  • Caramelized banana coins
  • Coconut oil
  • Pumpkin seeds
  • Pecans
  • Unsweetened coconut chips
  • Raw almond butter

Instructions

  1. In a pot, combine 1/2 cup oats with 1 cup homemade almond milk
  2. Bring to a boil then reduce to simmer.
  3. Add in lots of cinnamon + 1/2 mashed banana.
  4. Once it’s thick, add in one serving of vegan protein powder and another splash of nut milk and stir well.
  5. Caramelize banana coins in pan on medium-low with coconut oil.
  6. Top with caramelized banana coins  + pumpkin seeds + pecans + unsweetened coconut chips + a drizzle of raw almond butter and serve.
  7. Enjoy!
