Chocolate Chip Zucchini Bread


  • 1.5 cups grated zucchini (excess water drained out with your Bigger Better Nut Milk Bag)⁠
  • 2 eggs *or flax eggs*⁠
  • 1 1/2c white whole wheat flour⁠
  • 1/3c coconut oil⁠
  • 1/2c honey⁠
  • 1/4c plain greek yogurt *or vegan yogurt*⁠
  • 1 tsp vanilla extract⁠
  • 1/2tsp baking soda⁠
  • 1/2tsp baking powder⁠
  • 1tsp ground cinnamon⁠
  • 1/4tsp ground nutmeg⁠
  • 1/2 tsp salt⁠
  • 3/4c chocolate chips ⠀⠀⠀⠀⠀


  1. Preheat oven to 350F and grease & line an 8x4inch bread pan with parchment paper⁠
  2. In a large bowl, whisk together eggs, honey, coconut oil, yogurt and vanilla until well combined⁠
  3. In another bowl, mix together flour, baking soda, baking powder, cinnamon, nutmeg & salt⁠
  4. Slowly add dry ingredients to wet and mix just until evenly combined⁠
  5. Fold in the zucchini and 1/2c of the chocolate chips to combine (do not overmix!)⁠
  6. Transfer into loaf pan and sprinkle 1/4c chocolate chips on top (or more if using a wider baking pan)⁠
  7. Bake for about 50 mins until toothpick comes out clean
