Coconut Protein Bars

Ingredients

Bar:

  • 4 cups quinoa flakes
  • ¼ cup ground flaxseed
  • 2 tablespoons hemp hearts
  • 4 tablespoons chia seeds
  • 1 cup goji
  • 1 serving chocolate protein
  • ½ teaspoon of sea salt
  • 1 cup fresh ground almond butter
  • ½ cup coconut oil, melted
  • 2 tablespoons yacon syrup
  • 2 teaspoons pure vanilla extract
  • 1 cup coconut pulp from homemade coconut milk
  • 2 teaspoon psyllium husk
  • 1/2 cup coconut cream
  • 1 ripe banana


Coconut Pitaya Cream:

  • 1 cup of coconut yogurt
  • 1 teaspoon Ellie's Best Pink Pitaya Powder
  • 1 teaspoon yacon syrup
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon vanilla extract 

Instructions

  1. Add all bar ingredients into your food processor then blend until dough consistency.
  2. Add to your mold and freeze for two hours •Drizzle pink pitaya coconut cream over and enjoy!
