Carrot "Muffin Top" Cookies ⁣

Ingredients:

  • 2 Flax eggs (2 Tbls flax meal + 6 Tbls. Warm water)⁣
  • 1 1/2 cups of oat flour⁣
  • 1/4 cup of almond flour⁣
  • 1/4 cup coconut flour⁣
  • 2 tsp. baking powder⁣
  • 1 tsp. cinnamon⁣
  • 1/2 tsp. ground ginger⁣
  • 1/2 tsp sea salt⁣
  • 1/3 cup of pure maple syrup⁣
  • 1/2 cup of almond butter⁣
  • 2 Tbls of homemade almond milk⁣
  • 1 Tbls. Vanilla extract⁣
  • 1 1/2 cups of shredded carrots (excess moisture removed by squeezing through your Bigger Better Nut Milk Bag⁣)
  • 1/4 of raisins and/or walnuts⁣ (optional)

 

Icing: ⁣

  • 1 cup of unsalted cashews, soaked
  • 1/2 cup of coconut cream⁣⁣
  • 1/4 cup of homemade coconut milk ⁣⁣
  • 2 big scoops of vanilla collagen

 

Directions:

  1. Preheat oven to 350°.
  2. Combine ground flax + water, stir and let sit for a few minutes it thicken
  3. In a large bowl combine all flours + cinnamon, salt and baking soda
  4. Pour in almond milk, flax mixture, maple syrup, almond butter and vanilla
  5. Mix all together and slowly add in carrots + raisins/walnuts (optional)
  6. Scoop 2 inch balls onto parchment lined baking sheet
  7. Bake for 20 mins & let cool
  8. Top cookies with your icing - to make icing combine all ingredients into a good processor and pulse until smooth. ⁣
