
Carrot Cake Muffins
Ingredients: (10 muffins)
- 1/3 cup extra virgin olive oil
- 1/3 cup pure maple syrup
- 1 cup homemade cashew milk
- 1 tsp pure vanilla extract
- 1 1/2 cups almond flour
- 1/2 cup coconut flour
- 1/4 tsp baking soda
- 1 cup grated carrot
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp cloves (this is optional -you can leave it out if you don’t love cloves)
Instructions:
- Whisk the olive oil and maple syrup
- Add in the milk and whisk (it will end up looking similar to melted butter😉)
- Add in the vanilla
- Mix in the almond flour
- Add in the coconut flour
- Add the baking soda
- Mix in the carrots
- Add spices
- Add muffin cups to a muffin tin
- Transfer the batter (I like to top with oats)
- Bake at 375 for 30-35 minutes
