Carrot Cake Muffins

Ingredients: (10 muffins)

  •  1/3 cup extra virgin olive oil
  •  1/3 cup pure maple syrup
  •  1 cup homemade cashew milk
  •  1 tsp pure vanilla extract
  •  1 1/2 cups almond flour
  •  1/2 cup coconut flour
  •  1/4 tsp baking soda
  •  1 cup grated carrot
  •  1/2 tsp cinnamon
  •  1/4 tsp nutmeg
  •  1/8 tsp cloves (this is optional -you can leave it out if you don’t love cloves)

Instructions:

  1.  Whisk the olive oil and maple syrup
  2.  Add in the milk and whisk (it will end up looking similar to melted butter😉)
  3.  Add in the vanilla
  4.  Mix in the almond flour
  5.  Add in the coconut flour
  6.  Add the baking soda
  7.  Mix in the carrots
  8.  Add spices
  9.  Add muffin cups to a muffin tin
  10.  Transfer the batter (I like to top with oats)
  11.  Bake at 375 for 30-35 minutes
