Carrot Cake Banana Bread


  • 2 ripe bananas
  • 2 eggs
  • 1/3c coconut oil (melted & cooled)
  • 1/3c maple syrup
  • 1tsp vanilla extract
  • 1/4c almond milk
  • 1 3/4c whole wheat pastry flour (sub white wheat flour or gf flour)
  • 1tsp baking soda
  • 1tsp cinnamon
  • 1/4tsp nutmeg
  • 1/4tsp salt
  • 1c finely shredded carrots
  • 1/2c crushed walnuts
  • 1c cashews (soaked overnight or in hot water for 2hrs)
  • 1/4c almond milk
  • 2tbsp melted coconut oil
  • 3tbsp maple syrup
  • 1tbsp lemon juice
  • 1tsp vanilla extract


1.preheat oven to 350F and grease or line a loaf pan with parchment paper a large bowl, whisk together the mashed bananas & eggs
3.add in maple syrup, coconut oil, vanilla & almond milk and stir until fully combined a medium bowl combine all
dry ingredients except carrots & walnuts
5.add dry ingredients to wet and stir until just incorporated (do not overmix!)
6.fold in carrots & walnuts
7.transfer batter to prepared loaf pan and bake 45-55mins until toothpick comes out clean
8.Frosting: blend all ingredients in a high speed blender until smooth and creamy, scraping down sides as needed. Place frosting in fridge at least 1hr to thicken
9.let loaf cool completely before
