
Blueberry Tarts
Ingredients:
~Filing
- 2 cups blueberries
- 1 cup coconut cream
- 1/2 cup pure maple syrup
- 1/4 cup tapioca starch
- 1/2 tsp cream of tartar
- 1 tsp lemon juice
Instructions:
- Blend and set aside.
~Crust
- 1 and 1/4 cup almond meal *made from homemade almond milk pulp
- 1 cup oats
- 1/4 cup chia seeds
- 1/2 cup water
- 9 dates
- 1/4 tsp vanilla
- Pinch of salt
Instructions:
- Blend
- Press into molds around the sides and the bottom.
- Fill with the blueberry purée and refrigerate.
