Blueberry Tarts

Ingredients:

~Filing

  • 2 cups blueberries
  • 1 cup coconut cream
  • 1/2 cup pure maple syrup
  • 1/4 cup tapioca starch
  • 1/2 tsp cream of tartar
  • 1 tsp lemon juice

Instructions:

  1. Blend and set aside.

~Crust

Instructions:

  1. Blend 
  2. Press into molds around the sides and the bottom. 
  3. Fill with the blueberry purée and refrigerate.
