
Blueberry Spice Cake Donuts
We are drooling over these blueberry spice cake donuts with berry miso cream cheese frosting! They are df, gf, and a blessing for your body!
Donuts - Ingredients:
~wet
- 1/4 cup mashed sweet potato (~1 small or 1/2 large sweet potato)
- 1/3 cup coconut oil or coconut butter (I used half of both)
- 2 eggs (can sub flax eggs)
- 1/2 cup homemade almond milk
- 3 tbsp maple syrup
- 1/2 tsp vanilla
~dry
- 1/4 cup quinoa flour
- 1/4 cup almond flour
- 1 tbsp coconut flour
- 1 tsp baking powder
- 1 tsp pumpkin pie spice
- pinch ground ginger, cardamom, salt
~extra
- 1/2 cup fresh blueberries
Instructions:
- Combine all wet ingredients.
- Stir dry ingredients into mixture, then fold in any extras.
- Spoon into donut pan, and level the tops. Bake at 350F for 30 minutes.
Berry Miso Cream Cheese Glaze - Ingredients:
- 2 oz cashew cream cheese
- 3 tbsp maple syrup
- 1-2 tbsp mashed blueberries
- 1 tbsp white miso
Instructions:
- Whisk together all ingredients until smooth.
- Chill while donuts cool, then dunk them in for the perfect glaze.
- Spoon any leftover over the tops. Enjoy!
