Blueberry Spice Cake Donuts

We are drooling over these blueberry spice cake donuts with berry miso cream cheese frosting! They are df, gf, and a blessing for your body!

Donuts - Ingredients:

~wet

  • 1/4 cup mashed sweet potato (~1 small or 1/2 large sweet potato)
  • 1/3 cup coconut oil or coconut butter (I used half of both)
  • 2 eggs (can sub flax eggs)
  • 1/2 cup homemade almond milk
  • 3 tbsp maple syrup
  • 1/2 tsp vanilla

~dry

  • 1/4 cup quinoa flour
  • 1/4 cup almond flour
  • 1 tbsp coconut flour
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • pinch ground ginger, cardamom, salt

~extra 

  • 1/2 cup fresh blueberries

Instructions:

  1. Combine all wet ingredients.
  2. Stir dry ingredients into mixture, then fold in any extras.
  3. Spoon into donut pan, and level the tops. Bake at 350F for 30 minutes.

Berry Miso Cream Cheese Glaze - Ingredients:

  • 2 oz cashew cream cheese
  • 3 tbsp maple syrup
  • 1-2 tbsp mashed blueberries
  • 1 tbsp white miso

Instructions:

  1. Whisk together all ingredients until smooth.
  2. Chill while donuts cool, then dunk them in for the perfect glaze.
  3. Spoon any leftover over the tops. Enjoy!
