Blueberry Banana Bread Muffins
- 1 cup oat flour
- 2 tbsp flax seed
- 1 tbsp chia seed
- 1 tbsp hemp seed
- 2 tsp baking powder
- 1 tsp baking soda
- 1/8 tsp salt
- 1 tbsp date sugar (optional)
- 2 tbsp @gardenoflife vanilla protein powder
- 1 tbsp nut milk
- 3 medium-large brown bananas
- 1 tsp vanilla
- 3/4 - 1 cup of fresh blueberries
1.Preheat the oven to 350°.
2.In a large mixing bowl, mash the bananas, then stir in the nut milk and vanilla.
3.In a separate bowl, mix together the oat flour, flax seed, chia seed, hemp seed, baking powder, baking soda, salt, sage sugar, and protein powder. Stir until well combined, then pour the liquid mixture into the dry.
4.Mix in the blueberries and scoop the batter into a muffin baking sheet with muffin liners.
5.Top with more blueberries, if desired. Bake for 20-25 minutes, or until a toothpick comes out clean. Store in the refrigerator for 3-5 days.
