Berry Chia Pudding

Ingredients & directions:

Current jam:

  • Red currants
  • Strawberries
  • Water
  1. Mix together and simmer until desired consistency is reached

Mango coconut ice:

  • Frozen mango
  • Frozen coconut meat
  • Coconut water
  1. Blend together until slushy 

Pink chia pudding:

Purple chia pudding:

 

Directions for Chia Puddings:

  1. In a bowl or mason jar, mix together chia seeds, milk, and powder or berries.
  2. Once the chia pudding mixture is well combined, let it sit for 5 minutes, give it another stir/shake to break up any clumps of chia seeds, cover and put the mixture in the fridge to “set-up” for 1-2 hours or overnight.
  3. After it is set, layer it like so: purple chia pudding, current jam, pink chia pudding, mango coconut ice. Enjoy!
